A collection of food trailer concepts developed and launched from scratch for high-traffic urban locations, festivals, and seasonal events across Estonia. Designed for maximum operational efficiency and fast service, GC Gastrobox offered a diverse menu including craft burgers, poke bowls, mezze, fish & chips, pasta, tortillas, salads, and baked mussels. The project involved concept development, menu engineering, kitchen workflow design, team training, operational systems, and day-to-day management. Created to deliver restaurant-quality food in a mobile format while maintaining speed, consistency, and profitability.
