My first independent restaurant project, opened in the heart of Tallinn’s Old Town. Signature GC Gastrobar was built around the idea of making gourmet cuisine accessible for everyday dining by combining fine dining techniques with approachable pricing.
The menu was entirely my own creation, inspired by flavors from around the world and updated regularly to keep the concept fresh, creative, and unique.
